The easiest, most nutritious salad to make and usually you should have the majority of the ingredients in the pantry or fridge! This is the perfect post-workout lunch/dinner as it’s filled with protein and vitamins to help repair your muscles. Eat it at home, or take it into work, this is a guaranteed crowd pleaser and perfect coming up to the warm weather.

 

What you’ll need

1 x can of tuna

Rocket or any mixed salad of choice

4 mini cucumbers

1 x onion

1/2 can of beans (any choice)

1/2 avocado

cherry tomatos

2 x carrots

1 x stick of celery

Olive oil

1/2 Lemon

2 tsp white wine vinegar

Salt and Pepper to season

How to make it 

  1. Wash all the fresh produce, and drain the beans. Set aside.
  2. Place all the ingredients into a bowl, and add the tuna last on top.
  3. In a bowl, mix the olive oil and half a lemon. Add in the vinegar. Mix well.
  4. Pour the dressing onto the salad and season to finish.

 

Add any additions that you desire! get creative and add sunflower seeds, goats cheese whichever, this salad is a great base to tailor to whatever ingredients you have in the fridge or the cupboard!
