What you’ll need
1 cup shredded coconut
3/4 cups puffed rice
1 tbsp chia seeds
1/2 cup cranberries (or any fruit)
1/2 tsp vanilla essence
1/4 cup rice malt syrup
1/2 cup peanut butter
- Combine the rice, coconut, chia, and fruit into a large mixing bowl.
- Place the syrup and the peanut butter over the stove and cook until well combined.
- Add the rice to the syrup and peanut butter and pour into a lined tin.
- Place it in the fridge for around 1-2 hours and then cut into 18 bars.
