What you’ll need

1 cup shredded coconut

3/4 cups puffed rice

1 tbsp chia seeds

1/2 cup cranberries (or any fruit)

1/2 tsp vanilla essence

1/4 cup rice malt syrup

1/2 cup peanut butter


  1. Combine the rice, coconut, chia, and fruit into a large mixing bowl.
  2. Place the syrup and the peanut butter over the stove and cook until well combined.
  3. Add the rice to the syrup and peanut butter and pour into a lined tin.
  4. Place it in the fridge for around 1-2 hours and then cut into 18 bars.
