With Australia Day fast approaching, and all the festive season eating of the past few weeks, why not follow our recipe and make the traditional Australian treat of lamingtons something you don’t have to feel guilty about? We have simply selected healthier ingredient options for a new take on these traditional treats. Perfect for taking to barbecues and picnics, these heavenly delights are sure to impress!

What you will need for the cake: (10-12 portions)

6 free range eggs

2 cups of almond meal

1/4 cups of coconut flour

2 teaspoons baking powder (or gluten free baking powder)

1 tablespoon of vanilla extract

2 tablespoons of honey

3/4 cups of coconut milk

1/2 cup of strawberry or raspberry jam

2 handfuls of shredded coconut

What you will need for the chocolate ganache:

1 1/3 cups of coconut oil

1 cup cacao

1 tablespoon of vanilla bean paste

A pinch of salt

1/2 cup of rice malt syrup (or honey, maple, or coconut syrup)

4 tablespoons of coconut milk

 

Method for the cake:

1. Put the almond meal, coconut flour, and baking powder in a bowl and stir

2. Whisk eggs in a separate bowl, then add the coconut milk and honey.

3. Pour these ingredients into the large bowl with the flour and then mix well

4. Pour and spread neatly into your choice of two equally sized oven trays (making sure that the mixture is halved exactly), then bake both at 180C for approx. 20-30 minutes (watch carefully for browning from the 20 minute mark)

5. Remove the cakes from the oven and store overnight to cool

 

Method for the ganache:

1. Melt the coconut oil and pour into a bowl with the cacao powder and stir well

2. Add the vanilla bean paste, the salt, and the rice malt syrup (or your choice of sweetener), then add the coconut milk

3. Stir until the mixture is smooth with no lumps

4. Let the mixture cool to room temperature

Final touches:

1. Spread the jam evenly onto one side of the sponge

2. Cut both of the cakes around the edges and place one on top of the other

3. Cut the cake into your preferred shape of rectangles or squares

4. Dip the cakes into the chocolate ganache

5. Roll the cake in the shredded coconut

6. Enjoy!!
