The easiest, most nutritious salad to make and usually you should have the majority of the ingredients in the pantry or fridge! This is the perfect post-workout lunch/dinner as it’s filled with protein and vitamins to help repair your muscles. Eat it at home, or take it into work, this is a guaranteed crowd pleaser and perfect coming up to the warm weather.
What you’ll need
1 x can of tuna
Rocket or any mixed salad of choice
4 mini cucumbers
1 x onion
1/2 can of beans (any choice)
1/2 avocado
cherry tomatos
2 x carrots
1 x stick of celery
Olive oil
1/2 Lemon
2 tsp white wine vinegar
Salt and Pepper to season
How to make it
- Wash all the fresh produce, and drain the beans. Set aside.
- Place all the ingredients into a bowl, and add the tuna last on top.
- In a bowl, mix the olive oil and half a lemon. Add in the vinegar. Mix well.
- Pour the dressing onto the salad and season to finish.
Add any additions that you desire! get creative and add sunflower seeds, goats cheese whichever, this salad is a great base to tailor to whatever ingredients you have in the fridge or the cupboard!
